Cucumbers

Of the 10 different varieties of cucumbers we planted, we’ve already harvested some delicious, and may we say BEAUTIFUL, samplings of Adam, Miniature White, Poona Kheera, Sabre, Parisian, and Akito.

I’m dreaming of thin slices drizzled with honey, pepper, minced coconut flakes and soaked lentils, or a cool cucumber & mint infused green tea to make the best ending to a warm afternoon. I’m thinking future spicy pickles, or middle eastern fresh summer salads with tomatoes, cucumber chunks, sesame seeds, olive oil & lemony balsamic vinegar…just to make your heart throb and your cheeks salivate.

hope you get a chance to stop by the markets soon or come to our next farm tour or begin a CSA membership. we wouldn’t want you to miss out on all this goodness!

Adam

adam cucumber

The adam is maybe one of the staple cukes. Yields more than we know what to do with, lasts long, and tastes perfect. I’ve pickled this variety before with great success, used it for popsicles, added it to cold water, even soaked my allergy ridden eyelids with it’s soft fruit.

Armenian

armenian cucumber

This is our prized heirloom cucumber variety. Though unusual and even snake like, this cuke is always sweet and cripsy, even when it grows huge. These guys love the heat, and their flavor proves it. Soft, sweet, not TOO melon tasting but just, refreshing and crisp. Also makes a great table ornament smile

Crystal Apple

crystal apple cucumber

These guys are tricky. They’re very tender and creamy with their delicate,white skin. The flavor is mild, great for fresh eating and they’re very prolific. But if you leave them to grow a bit more than they should, they get bitter. The skin especially. So just try to your best, play with the inside fruit, plant the seeds. Maybe grow your own patch?

Mexican Gherkin

mexican gherkin cucumber

Is it just a baby watermelon? It is an alien? No it’s just a delicious, fun, and extravagant Mexican Gherkin Cucumber. They are good added to salads or can be pickled. They have a cucumber-like taste with a touch of lemon. The ornamental vines have tiny leaves and flowers and are perfect for the cottage garden. In terms of growing, they need the heat but aren’t picky with direction. Up or down or sideways or topsy turvy, this variety no bounds and will climb and climb and climb! Plus, the kids think its fun and cute too. You can’t beat it!

Akito

akito cucumber

The Akito is an American hybrid cucumber, that grows all season long in abundance. They’re small, uniform, dark green, and taste amazing. Watch out-these guys have some definite prickles all over them, but they brush off easy.

Saber

saber cucumber

This is a dark green fruit, slightly spined but normally grows to about 7-9”. One of the earlier fruits because it can resist low temperatures. Not too sweet, but not bitter at all. The perfect companion to any iced summer beverage or freshly tossed salad.

Israeli Cucumber and Tomato Salad

mixed cucumbers
INGREDIENTS:
4 small plum tomatoes
2 cucumbers, peeled
3 scallions
1/2 cup parsley (flat leaf variety)
1/4 cup fresh mint leaves (optional)
1/4 cup chopped fresh dill
3-4 tablespoons olive oil
1 lemon, juice of
salt &pepper
PREPARATION:
Finely chop the vegetables. The key to making a really delicious Israeli salad is having the ingredients chopped delicately.
Lightly mix with the oil, herbs, and seasoning.
Add some slightly toasted sesame seeds if you really want to step it up a notch smile
