Padron Pepper and Melon Chilled Soup

This is a delicious summer soup from our friends from Sono Trading Co (Also known as Mostly Organic Mustards) Try it out and live decadently…
Ingredients:
1lb padron peppers (about 40 peppers)
2 ribs fresh celery
1/2 an extremely ripe large cantaloupe or melon, roughly chopped
fresh lime juice
fresh mint
salt
veggie stock*

seed and de-vein padron peppers.
chop celery.
sauté peppers and celery for 1 minute in hot olive oil.
transfer peppers and celery to blender with the melon.
blend, adding veggie stock as necessary to get desired consistency.
add salt, lime juice, and mint to taste and blend to incorporate.
push liquid through a sieve or run through a food mill to remove fibers.
chill soup in the fridge for at least 1 hr.
I like to serve it with a dollop of creme fraiche or goat-yogurt and a whole mint leaf.
